Chocolate chip and marmalade muffins

Fresh muffins on the day they are baked are always a hit. I road-tested a batch of these chocolate chip muffins with an oozy orange marmalade centre for my partner’s colleagues at the local hospital and they were devoured at speed! Seriously delicious and so so easy to make, try them out for friends and family You’ll be glad you did.

Chocolate and marmalade muffins
  • Makes 12
  • 250g plain flour
  • 2 tsps baking powder
  • 1/2 tsps bicarbonate of soda
  • A pinch of salt
  • 115g unsalted butter, melted and cooled
  • 115g soft light brown sugar
  • 2 large eggs, beaten
  • 150 whole milk
  • 1/2 tsp vanilla essence
  • 100g bag of chocolate chips
  • 4 tbsps marmalade

To make…

  • Heat the oven to 180C.
  • Line a muffin tin with 12 paper muffin cases
  • Measure out the dry ingredients and sift the flour, baking powder, bicarbonate, and salt together. Set aside.
  • In a large bowl, mix together the cool melted butter, eggs, sugar, milk and vanilla with a hand held electric whisk.
  • Fold the flour into the butter mix using a large wire whisk if possible. Do not overmix so as to get the best texture.
  • Use half the mixture to fill the muffin cases equally. Place a teaspoon of marmalade in the centre of each one and then cover with the remaining batter. The cases should be full to the top.
  • Bake for 20 to 25 minutes or until well-risen and golden. Cool slightly before eating as the marmalade centre will be very hot.
