Zoom-call pork chop traybake

When there’s just two or three of you and you want a delicious, simple and low maintenance supper, this is the perfect choice. It takes no time at all to prep and will be ready to eat in the time it takes to do a free 40-minute Zoom call with friends and family.  Potatoes, banana shallots and thick pork chops oven-roast in 40 minutes and ooze sticky goodness using just one traybake roasting dish. Try it, it’ll be your ‘go-to’ mid-week supper of choice before you know it.

Traybake pork chops

Serves 2 or double to serve 4

  • A large rectangular traybake roasting dish
  • 2 thick pork chops – it’s very important that you use thick ones so that they don’t dry out. Take them out of the fridge an hour before you start cooking to get them up to room temperature before cooking.
  • 1 tablespoon of cold-pressed rapeseed oil
  • 2 large banana shallots
  • 2 medium-sized potatoes, washed and dried.
  • Optional: fresh sage leaves or a dessertspoon of paprika and a pinch of chilli powder
  • Green veg to serve – tender stem broccoli or beans work well and add colour 

To make…

  • Preheat the oven to 220°C.
  • Prick the potatoes with a fork and pop the whole potatoes in the microwave on high for 4 minutes. Remove, allow to cool for a couple of minutes. Cut each one into quarters. (to ring the changes you could toss the potatoes in oil separately along with a dessertspoon of paprika and a pinch of chilli powder)
  • Peel and trim the banana shallot but leave the end intact so it will stay whole.
  • Add the potatoes and shallots to the dish and coat them thoroughly in the oil, a little extra fat will render from the chops; arrange them so the shallots are one end of the tray and the potatoes at the opposite end.
  • Season the chops on both sides with sea salt and black pepper and lay them in the dish. I have fresh sage in my garden so I also place a few leaves over each side of the chop for extra flavour.
  • Roast for 40 minutes, you can check them halfway and turn the chops and potatoes if you feel so inclined. You should end up with a perfect mini-roast dinner all ready to serve. Moist and flavoursome pork chops, crisp potatoes and beautifully caramelised shallot – a little piece of heaven served with your favourite green veg.
